Meal Plan: October 5-11

Sorry I’m a little late in getting this up this week! I’ve been feeling a bit zombie-ish after work and crossfit these last few days. I hope next week will be a bit less hectic.
This week, I have Monday off, and I’ll be celebrating my long weekend by doing a bunch of cooking. I love cooking, so it’ll be a lot of fun to spend some more time in the kitchen. I’m especially looking forward to tonight. Dillon and I were thinking of going out for a date night, but I thought it would be much more fun to cook him a fancy dinner. We’ll probably end up doing some of the cooking together, and then I plan on enjoying our meal with wine and candles.. the whole fancy date experience! I can’t wait!
So here’s my plan this week:
Friday: Ground Beef Concoction
I browned some ground beef, seasoned with salt, pepper, garlic powder, and onion powder. Then I filled a plate with some kraut, carrots, a slice of raw cheese, and the ground beef topped with mustard. Random? Yes. Yummy and filling? Yes!
Satuday: Fancy Dinner
Appetizer: Bacon-Wrapped Medjoul Dates and Mixed-Greens Salas with Balsamic Vinegar
Main Dish: Steak seasoned with salt and pepper, cooked in cast-iron skillet, Brussel Sprouts Roasted with Bacon, and Garlic Cauliflower Puree 
Dessert: Pumpkin Brownies with Pumpkin Pie Frosting 
Sunday: Chili
Monday: Pork Chops with Squash
I’m not entirely sure how I’m going to season these this time. I will be making squash as we received 3 different kinds this week from our CSA. The butternut squash we got last week was awesome, so I’m excited to try some others. It’ll either be celebration, delicata, or buttercup.
Tuesday: Leftovers
Wednesday: Roast and Veggies
Either beef or pork – whatever looks best at the market. Also still not sure how I want to season this one. I have a few spice blends I’ve put together, so I’ll probably just do a dry rub with some broth. Then I’ll serve it with whatever veggies we have left.
Thursday: Leftovers
Sounds like a good week to me! I’m excited to get cooking, espcially on tonight. Those brownies sound fabulous!
Prep this week will include more mayo, and baking some chicken breasts to have protein on hand incase we run out of leftovers.. which we usually do!
Well I’m off to go lift some heavy things at crossfit. Have a great day!
